Какие нарушения выявляют при исследованиях рыбы и рыбной продукции, насколько безопасны пресервы и как выбрать свежую и мороженую рыбу, рассказала в студии «Ветеринарии и жизни» Жанна Баргман, руководитель Испытательного центра Ленинградской межобластной ветеринарной лаборатории Россельхознадзора, информирует «Тихоокеанская Россия».
По словам собеседницы «ВиЖ», в этом году из всех исследованных в Испытательном центре проб рыбы и рыбной продукции в 5% выявили нарушения. Чаще всего выявляют бактерии группы кишечной палочки, сообщила эксперт. Кишечную палочку обнаружили в 30 исследуемых образцах, уточнила спикер. На втором месте по количеству выявлений – нарушения по паразитарной чистоте. «Очень часто мы выявляем пробы рыбы, особенно выловленной в естественной среде обитания, не соответствующие по этому показателю», – уточнила собеседница «ВиЖ».
Также, по словам Жанны Баргман, в аквакультурной рыбе нередко обнаруживают остатки антибиотиков, в основном тетрациклиновой группы. «В этом году случаи выявления были в пробах рыбы из Китая – это угорь, а также выявили остатки антибиотиков в китайской креветке, выращенной в искусственных условиях», – сообщила эксперт. Жанна Баргман уточнила, что в отечественной аквакультурной рыбе следы антибиотиков в этом году не выявляли.
Эксперт прокомментировала ситуацию с фальсификацией рыбной продукции, рассказала об исследовании пресервов и дала советы покупателям, как выбрать рыбу. Жанна Баргман рекомендует смотреть на состояние покровов рыбы, глаз и доверять собственным органам чувств.
Кроме того, собеседница «ВиЖ» ответила на вопросы о результатах исследований молочной и мясной продукции и рассказала о видах фальсификации меда.
